Applications will not be considered where theapplication form has not been completed in full.If the role you are applying forinvolves regulated activity and you have been shortlisted for a first stageinterview, you will be asked to fill out a Declaration of Offences Form.The Role of Sous ChefThe role is made up of many varyingresponsibilities including preparing; cooking using fresh ingredients; placingorders with suppliers and presenting high quality dishes; managing anddeveloping the kitchen team in the food production processes, and leading theoperation in the absence of Executive Chef and Head Chef.Main AccountabilitiesTo manage and direct the kitchen team to the required standards set bythe Head Chef.Be able to develop menus and lead the kitchen team to prepare anddeliver, with the support of Head Chef.Ensure good stock and waste control is practiced by all in the kitchen.Be responsible for the quality control of stock and prepared foods forevery session.Develop and monitor the kitchen team to execute cooking to the expectedhigh standards quickly and efficiently.Ensure the cleanliness and organisation of designated sections.Manage set up and cooking on live station as needed.Perform other duties as assigned by the Head chef, Executive Chef and SeniorManagement.Always maintain a positive and proactive attitude.To ensure that any concerns youobserve, or are raised with you in your role, are shared with the SafeguardingTeam through appropriate channels.General Club AccountabilitiesTo ensure compliance with all relevant Clubpolicies, including health and safety policies and with specific reference tothe data regulations.To ensure compliance with all relevant legal,regulatory, ethical, and social requirements.To ensure compliance withthe Clubs Safeguarding Policy and processes.To ensure compliance withthe Clubs Code of Conduct.Toactively embed equity, diversity and inclusion into the operations and strategyof your team, in line with our EDI strategyTo build and maintain good working relationshipsboth internally and externally, maintaining a professional image at all timeswhen representing Brentford FCTo keep confidential any information gainedregarding the Club and its personnel.To maintain a flexible approach to work at alltimes.Any otherrelevant tasks and duties as directed by your line managerPerson Specification - Essential PersonalCharacteristicsBeprepared to work independently at times and lead a team at other times todeliver a high-quality service.Prepareand cook meat, fish, vegetables and all carbohydrates.Knowledgeand ability to manage a section daily, potentially in charge of the wholeoperation at times.Organiseorders and manage a team for pre- and post-match food.Beprepared to travel with the team on away trips and tours, checking on the hotelfood offering and cooking a live station.Keepon top of orders, with high level of attention to detail.Helpto maintain good food hygiene practices and good health and safety routinewithin the kitchen environment.Planand develop new menu ideas with the help of the Head chef.Beprepared to work and manage flexibly to exceed guest expectations.
